Pico de Gallo
Maybe it was just because it was extremely fresh? I have never been big on the flavor of pico but I could almost drink this stuff!

+ 4 roma tomatoes, concasse: peeled, and seeded*
+ 1/2 cup of white onion, grated + 1 jalapeno, minced + 2 Tbs Cilantro, fine minced + 2 Tbs fresh lime juice + salt and pepper *if you want to do it the "right" way, here is a pretty good video. Also, he says to boil for 30 seconds. That kinda gets lost in his accent... |
+ toss together ingredients
+ salt and pepper to taste + easy peasy... get out the chips and dip away |
